Strawberry Berry Berry Syrup
12 cups strawberries
2 cups water
3 cups sugar
Wash berries and cut off caps. Cut berries in half and set half of the cut berries in a bowl. Put the other half in a large pot. Using a potato masher crush berriies. Add the 2 cups of water. Heat to boiling then reduce heat. Cook on low heat for 5 minutes. Stirring as needed.
Using a strainer pour off berries over a large bowl. Push cooked berries to the side of the strainer to get all of the juice. Discard berry pulp.
In a 4 quart saucepan heat the juice to a rolling boil adding the 3 cups of sugar. Continue boiling for about 20 minutes. Add the other half of berries and boil for another 10 minutes until mixture is slightly thickend. Stir as needed. Pour into half pint jars and let cool. Use over pancakes or white cake. Raspberries or blackberries can replace strawberries in this recipe of 1850.
